Truffles
are one of the most expensive gastronomic
specialties in the world. Umbria is
one vast truffle field and it produces
different types of truffles: the black
truffle, the summer truffle (Tuber aestivum),
and the fragrant white truffle. The
predominant type is the Umbrian black
truffle from Norcia and Spoleto (Tuber
Melanosporum Vittadini). It matures
from November to March and differentiates
itself from other types of truffles
by accentuating its flavor when it is
boiled. The white truffle is still rarer
and more valuable. The truffles found
in the forests of the Marche, the white
as well as the black ones, have an excellent
quality and a very intensive flavor.
A few companies use the small truffles
to produce truffle cream, butter, and
oil with truffle flavor, mixed creams
with mushrooms, olives and truffles,
boxes with finely sliced summer truffles,
and cheese fondues with truffles. |
